Chocolate Chip Pancake Bites

I am NOT a morning person. I’m not used to eating breakfast which is a bad thing being diabetic. My morning starts with me wondering downstairs with my brain not quite in gear yet. I’m sure you know the feeling. I need food that doesn’t take a lot of thought to make and can be made quickly. Pancake bites are great for a non-thinking breakfast. Take them out of the freezer, pop them in the oven, add some fruit/protein and call it breakfast. How to make pancake bites for the freezer.

I’ve been working on getting some recipes together that I can make and freeze for breakfast. This recipe is versatile to where I can add different flavors. I can add strawberries, raspberries, cranberries, peaches and any other fruit or berry flavor you can think of. Today’s recipe includes chocolate chips. The recipe makes 12 pancake bites. Once made I can store them in a freezer bag in the freezer. When I wonder downstairs I just have to pop a few in the oven to warm them up for breakfast. Quick, simple and easy.
