Chocolate Chip Pancake Bites
I am NOT a morning person. I’m not used to eating breakfast which is a bad thing being diabetic. My morning starts with me wondering downstairs with my brain not quite in gear yet. I’m sure you know the feeling. I need food that doesn’t take a lot of thought to make and can be made quickly. Pancake bites are great for a non-thinking breakfast. Take them out of the freezer, pop them in the oven, add some fruit/protein and call it breakfast.
I’ve been working on getting some recipes together that I can make and freeze for breakfast. This recipe is versatile to where I can add different flavors. I can add strawberries, raspberries, cranberries, peaches and any other fruit or berry flavor you can think of. Today’s recipe includes chocolate chips. The recipe makes 12 pancake bites. Once made I can store them in a freezer bag in the freezer. When I wonder downstairs I just have to pop a few in the oven to warm them up for breakfast. Quick, simple and easy.
Let’s make pancake bites
Ingredients
- 1 Cup Bobs 7 grain Pancake and Waffle mix
- 3/4 Cup Milk
- 1 TBS Oil
- 1 tsp Vanilla Extract
- 5 ozs Chocolate Chips *Optional Flavors (strawberry, raspberry, cranberry, peach)
- 1 Md Egg
In a large bowl mix pancake mix, milk, oil, vanilla extract, and egg.
Mix until lumps are gone and the batter is smooth. Do not over mix.
Grease cupcake tin. I used a light coat of spray coconut oil.
I bought my cupcake tins from the Dollar Tree. They are made out of steel not aluminum.
*In this picture I used cupcake wrappers but they really didn’t work out for me. I couldn’t get the pancakes off the wrapper once they were cooled. My next set of pancake bites I made I greased the tin and it worked much better.
Spoon batter into cupcake tin. I filled mine 1/3 to 1/2 of the cup. I had to remember that they are bites, not muffins. lol
Bake at 375 degrees for 15-20 minutes.
Remove from oven and allow to cool.
After cooling I put them in a freezer bag and store them in the freezer. Now when I get up in the morning I can pop a few bites in the oven to warm them up and not have to try and figure out something to eat.

- 5 Ozs Chocolate Chips
- 1 Md Egg

Spray muffin tins with spray oil or grease with butter.
